Do you want to make Millies Cookies at home?

It will be much cheaper than buying them that’s for sure!

As we probably all know, Iceland now sell frozen, ready to bake, Millies Cookies now but they are still quite pricey.

This weekend, I decided to try and bake my own at home – anyone who knows me personally will know this is quite an achievement as the smoke alarm usually cheers me on whenever I enter the kitchen. I have managed to turn custard black and I have suffered stomach burns after trying to cook a meal from scratch and thought it was a good idea to learn against the hob. Ok, I’m probably not filling you full of hope here but the cookies I made at the weekend were AMAZING! I managed to surprise everyone!

I posted a photo of them on my Facebook page, Ashleigh Money Saver, at the weekend and I got a lot of messages asking for the recipe, so, here it is! This is quite similar to a recipe from BBC’s website but they include salt in their recipe, personally I think it’s better without.

You will need…

  • 125g butter, softened
  • 125g caster sugar
  • 100g light brown soft sugar
  • 1 egg, lightly beaten
  • 1 tsp vanilla extract
  • 225g self-raising flour
  • 200g chocolate chips or another filling


Method

  1. Preheat the oven to 180°C, gas mark 4
  2. Wait for the butter to soften a bit, I’m a bit impatient so I put mine in the microwave for 20 seconds 😉
  3. Mix the butter and both sugars together until they are a nice thick mixture
  4. Beat the egg in a separate bowl and then add it into the butter and sugar mix
  5. Add the vanilla to the mix
  6. Slowly add the flour into the mix – this can get quite difficult to mix after a while as the mixture is very thick, so feel free to give it to your partner to mix to save your arms getting tired. My husband loved me for this 😀
  7. Add the chocolate chips to the mixture. We also tried with mini Rolos instead of chocolate chips and they were amazing!
  8. Line a baking tray with grease proof paper
  9. Start rolling your cookie mix into small, ball shapes, about the size of a bouncy ball (I can’t think of anything else to compare the size too! haha) or make them a bit bigger if you want a gooey middle cookie dough style cookies.
  10. Put them in the oven for 7 minutes – don’t be alarmed that they are still soft, once they’ve cooled I promise you’ll love them!
  11. If you like crispy cookies, leave them in for 9 minutes.

Ta-da! You have home baked, Millies style cookies for a fraction of the cost!
